Banana & Cranberry Flapjacks

My sweet tooth has been out of control lately so I had to take some form of action whereby I could still satisfy the craving without resorting to a daily dose of refined sugar.

I needed a recipe that was quick and easy to make with ingredients that were in the cupboard already or easy to get.

These flapjacks can be adapted according to what fruits and seeds you prefer or have to hand and is as easy as pie!

You will need:

  • 50g butter plus extra for greasing
  • 2tbsp smooth peanut butter
  • 3tbsp honey or maple syrup
  • 2 ripe bananas, mashed
  • 1 apple, peeled and grated
  • 250g rolled oats
  • 85g dried cranberries
  • 100g raisins
  • 85g mixed seeds (I used chia and sunflower seeds)
  • 1tsp cinnamon
  • Zest of 1 orange
  • 50ml warm water

Heat the oven to 160C/140C fan/gas 3.  Grease and line a 20cm square tin with baking parchment.  Heat the butter, honey or maple syrup and peanut butter in a small pan.  Once melted, add the mashed banana, grated apple, cinnamon and water and mix well.

In a large bowl mix together the oats, dried fruit, seeds and orange zest.  Pour in the banana mixture and combine until everything is coated well.  Tip into the cake tin and level out the surface.  Bake in the oven for 55minutes until golden.  Leave to cool in the tin.  Cut in to 12 pieces and serve or store in an air tight container in the fridge.

‘Feelgood Flapjacks’ done!  Sweet treat sorted, and not a packet of Minstrels in sight.
